Chocolate Chocolate Pumpkin Brownie Cookies with Cinnamon & Sprinkles

Are you sick of pumpkin yet? Oh come on,, it isn’t even Thanksgiving yet!

One flavor combo I never really thought sounded all that great was pumpkin and chocolate. That is, until I tried cinnamon and chocolate and then changed my mind about chocolate mixed with spices. The thing is, when you mix chocolate and pumpkin, the pumpkin flavor kind of gets lost, but it adds such a great texture.

The other day I couldn’t decide between chocolate cookies, pumpkin cookies, and chocolate chip, so I decided on all three. The sprinkles were the kids’ idea, and are optional. Personally, I am not a big fan of sprinkles myself. Some chopped walnuts would have been a nice replacement.

Chocolate Chocolate Pumpkin Brownie Cookies with Cinnamon & Sprinkles

2 sticks butter
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 cup canned pumpkin
1 teaspoon baking soda
1/2 teaspoon salt
1 cup baking cocoa powder
2 cups all purpose flour
2 teaspoons cinnamon
2 cups chocolate chip
Sprinkles

Mix room temp butter, eggs, pumpkin, sugar, brown sugar, and salt.  Add in dry ingredients. Mix well by hand and add your chocolate chips last. Chill the dough for at least one hour.




Place One inch blobs, one to two inches apart on a greased cookie sheet or parchment.  Sprinkle optional sprinkles on raw cookies. You want to add sprinkles to the raw dough so that they stick. You also want your dough blobs to be smallish since baking for too long might melt the sprinkles. Seriously though, replace sprinkles with chopped walnuts for a yummy grownup version.

Preheat oven to 375º and bake cookies for around 14 minutes. Any less and they are too gooey. These come out with a very brownie texture due to the pumpkin.
