It is fall, y’all! So pumpkin season has started and these days that means they put pumpkin spice flavoring in all kinds of weird stuff that ends up not very good at all. Except for those pumpkin spice lattes. I don’t care how “basic” those are, they are delicious. I say instead of focusingon pumpkin spice flavor, we focus on actual pumpkin. I like pumpkin based muffins since they are versatile and my kids love them. You can also substitute any winter squash for the pumpkin.

These gluten free cupcakes are not very sweet and double as a muffin. You won’t even feel guilty about letting the kids polish off few too many.
Mini Cheesecake Pumpkin Pies with Pumpkin Spice Ganache
It is like pumpkin pie, cheesecake, and a pumpkin spice latte all wrapped up in a cupcake wrapper. They are too decadent to quality as a muffin I suppose, but no one needs to know that.
Gluten Free Pumpkin Pie Muffins
These are similar in texture to a pumpkin pie and can be a bit messy to eat. The buttercream is bit too much in my opinion. They are almost better without it. Kind of like how black coffee is better with a danish than sweet coffee.
Gluten Free Winter Squash Muffins with Coconut Flour
Use pumpkin, or any winter squash. Butternut and acorn work great. This muffin recipe is flourless so with a couple tweaks you could even please your paleo friends. Be sure to measure the coconut flour carefully. It is a tricky ingredient.
