With the warm season upon us, my mind is on homemade salad dressings again. Not to say I don’t make homemade dressings in winter, but I find it easier to make FUN dressings in summer. Summer means fresh herbs growing around the yard, and garden greens, and tomatoes that actually have flavor.

My chives are flowering, so they not only make a great tasty ingredient, but also a pretty garnish.

Fresh Chive & Lime Vinaigrette

  • 1/2 cup fresh chopped chives
  • 1/2 of a fresh lime peeled
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/4 cup olive oil
  • 1/2 cup apple cider vinegar

Fresh Chive & Lime Vinaigrette

The easiest way to make and store is to place all the ingredients in a wide mouth mason jar and insert an immersion blender. Blend it up for about 30 seconds and leave it right in the jar to store in the fridge. This generally will keep for about three days in the fridge.  I also use it as a marinade for chicken.
