Home Baked Sweet Potato Fries with Fresh Chives 2

My son Lucky is obsessed with sweet potatoes. Often times, a sweet potato and green beans is all he wants, morning, noon, and night.

Home Baked Sweet Potato Fries with Fresh Chives

  • 2 medium-large orange sweet potatoes
  • 1 teaspoon olive oil
  • fresh chives, chopped
  • Salt & ground black pepper to taste

Slice your potatoes into 1/4 inch discs and slice discs into sticks for fries. Lay them out across a paper towel and liberally salt the raw potato sticks to “sweat” them for an hour. You want to sweat them to remove water so they don’t end up a pile of mush in the oven. This is how you can get them to crisp up. After soaking up the excess water with the towel, pat them dry with another paper towel to get them dry.

Add them to a bowl with olive oil. Toss to coat. Sprinkle  salt(if you need more), pepper, and some of your chopped chives over potatoes.  Lay parchment paper on a baking sheet and spread potatoes out in a single layer. Place sheet in oven and bake at 420º for about 50 minutes.

Plate up and eat! These will not have the same consistency as most restaurant fries since they are not coated in flour. We tend toward gluten free cooking for our sin to help with his eczema. Honestly though, he likes them just fine.
