Easy Halloween Themed Bat Cookies with Gluten Free Immaculate Baking

Aaaannnnd it is October! How did that happen? Everything flies by as soon as school starts, doesn’t it? Now its time to start decorating our stoops with pumpkins and laughing skeletons, not to mention everything on earth is suddenly pumpkin spice flavored. last year, I went shopping the day after Halloween to buy the marked down decor, so this year I can actually decorate for October. We have no dining table to sit at right now since I am refinishing it, but we have faux pumpkins and sparkly bats draped around. #Priorities.

I did some baking over the weekend for the Fall season. If you read here often, you know I do a lot of gluten free baking since we are what I call a gluten-lite household due to our son’s eczema. sometimes gluten free baking can be tedious. It usually involves a few less popular ingredients or steps. Some pre-made dough would come in handy every now and then for those lazy days.

Guess what? It DOES. I made these vampire bat chocolate chunk cookies using Immaculate Baking gluten free refrigerated dough. Piece of cake, er, cookie. Actually they have gluten free cake mixes too.

Easy Halloween Themed Bat Cookies

  • Immaculate gluten free chocolate chunk cookie dough.
  • Edible eyes from the baking aisle.
  • A thin plain chocolate bar for cutting into triangles.
  • Optional candy corn. You could buy the candy vampire teeth, but I am cheap.
  • Dark chocolate frosting.

The dough is pre-separated. Place the dough balls of parchment paper on a baking sheet. Bake at 350 for 18 minutes or so. I actually needed to bake at 375 for about 20 minutes, but my oven might be weird. when done, let cookies cool a good 20 minutes.

Use about a tablespoon of frosting per cookie. more if you like, but I just wanted enough for color and to make features stick. Take your thin chocolate bar (I used Hershey Special Dark) and use a sharp knife to cut triangles for bat ears. Make them big or small, they’re your bats.

Alrighty, put your ears, eyes, and vampire teeth where they go. I told you these were easy. They may be simple and imperfect, but the kids will love them.
