These unassuming cookies make it count on the inside!
This is the perfect cookie to make in advance for Christmas. They freeze well and they can help use up that leftover Halloween candy! This is how I keep myself from eating all of the candy. Of course, I then need to keep myself from eating the cookies, which is why I put them in the deep freeze with the holiday baking.
Peanut butter candy bar cookies
- 1 cup peanut butter
- 1/2 cup white sugar
- 2 eggs
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups sifted flour
- 24 half inch pieces of candy bar (12 fun sized bars)
Mix peanut butter, eggs, and sugar. Add flour, baking powder, and salt and fold in by hand. Dough should be firm. Cut 12 fun sized candy bars in half. I used Baby Ruth and Snickers. Take about 2 tablespoons of dough (golf ball size) form a ball and flatten it by hand. Place the candy bar piece on the dough disc and wrap dough around bar. You should have enough dough to wrap all 24 candy pieces.
Place cookies on parchment paper on a baking sheet. Bake at
375 ° for 15 minutes.
You could also drizzle some melted chocolate on top for decoration if you are ambitious.
These cookies look rather dull, but are super rich when you bite into them. And the kids have fun making them! They love the idea of the candy baking inside the cookie.
