As parents, we hate denying the kids little treats, but sometimes I just cringe at the idea of giving them what is essentially candy. Take those little fruit snack packs for example. They are basically gummy bears with 10% fruit juice added. In an effort to curb their ingestion of junk, while also making them feel like they are getting a treat, I have been coming up with snacks other than fruit and veggies. I ordered up some grass fed gelatin and have been experimenting with making our own fruit snacks. Minus the corn syrup and coloring of course! Gelatin (and collagen) are so important for joint health for a lot of people. Especially if they have a limited diet.
Strawberry Blueberry Gummies
Ingredients
- 1 tsp coconut oil or olive oil
- 1 cup water
- 1 teaspoon honey
- 2 cups pureed berries
- 4 tbsp plain gelatin
Grease an 9×13 in Pyrex type glass cake pan with the coconut oil. Puree 3-4 cups fresh or frozen berries with blender to make 2 cups puree. In a small saucepan, heat the water with honey over medium heat until it reaches a light simmer. Whisk in gelatin, 1 tablespoon at a time until completely dissolved. You may need to whisk very quickly and vigorously! Add the strawberry-blueberry puree to the water gelatin mixture, whisk quickly to combine. Pour the mixture into your glass pan.
Refrigerate until set, about two hours.
Cut into small squares! They turn out like a tougher version of jello.
I have been using Great Lakes gelatin since it is completely grass fed. Admittedly, it is a bit stinky straight out of the can, but that is what you get with as little processing as possible.
I’ve thought about getting some cute molds to try, but it seems rather labor intensive since my kids seem fine with little rectangles.
Great timing, I just bought berries last night and they are such big containers I needed ideas on how to use them before they spoil. Hope I can make these today!
