Let’s talk desserts. You may have noticed we are on a kick around here. Cookies, puddings, pies, oh my! Something about Summer and seasonal fruit seems to bring out the sweet teeth in our house.
We have been living on the patio this season, so our meals and snacks are very picnic oriented.
So today, in honor of National Chocolate Pudding Day, (yes really!), the kids indulged in gluten free Chocolate Coconut Pudding cups.

Chocolate Coconut Delight Cups
- 1 cup Kozy Shack chocolate pudding
- 2 tablespoons unsweetened coconut flakes
- 2 small coconut clusters cookies or macaroons
Get two small dessert cups or ramekins and fill each with a half cup of pudding. Top each with a tablespoon of coconut flakes. You can use raw or toasted! Place one small coconut fudge cluster (recipe here: No Bake Coconut Fudge Protein Oat Clusters) pressed into pudding off to the side. Enjoy with red wine, I mean your children on your deck.
