Dark Chocolate Almond Clusters with Sea Salt
If you are looking for a super easy treat to make up the night before or even that morning, here you go! These clusters have only four ingredients and each of them are things I always have in the house. The amounts below will make a lot of clusters, so you might want to reduce the recipe if you don’t too many of them hanging around.
- 4 cups dark chocolate chips
- 4 tablespoons butter
- 4 cups raw unsalted almonds
- Sea salt
This is super easy since we are using chips instead of baking chocolate bark. Just place your chips and butter in a sauce pan on low heat and melt it together. Make sure to stand over it stirring so you don’t scorch your chocolate. Add your almonds and mix them in.
Scoop spoonfuls of the mixture in blobs onto a baking sheet covered in foil or wax paper. I make my blobs about two tablespoons. Sprinkle your sea salt over your clusters while they are still warm and pop the sheets into the fridge. (Or freezer if you are in a hurry. Or if you live up here, you can even set them outside, but the squirrels might have a heyday.) Once they have cooled enough to be firm you can remove them from the papered/foiled sheets for storing.
There are different tweaks you can use for almond clusters. You can substitute peanut butter for the butter for a change in flavor. You could also try coconut oil instead of butter, but make sure to reduce the amount by st least 25% or your chocolate won’t be firm enough. You could add toasted coconut shreds to your melted cluster mix for a yummy twist! I think next time I might make a batch with coffee beans. Just make sure to keep those ones away from the kids.
