Mixed Berry and Spinach Smoothie

With the July heat, it is way too steamy for a hot cooked breakfast, so it makes sense to make Summer time the season of smoothies. A sure fire combo for my kids is a spinach, frozen berry, and Greek yogurt trio.

A berry, spinach, and Greek yogurt smoothie is just that.

  • 1 cup Frozen berries (Fresh is fine but more expensive)
  • 2 cups fresh spinach
  • 1/2 cup full fat Greek yogurt
  • 1 cup crushed ice

Toss your ingredients together in a conventional blender or you can use an immersion blender. Add a little water (about 1/2 cup) and blend on high until smooth.

What you get is about two smoothies worth of deliciousness. If you want it a little tart, add a half of a lemon before blending. My kids love the added lemon for that sweet sour effect. The berries add plenty of color and antioxidants. Spinach provides calcium, iron, and fiber. The full fat Greek yogurt is high in protein and provides satiety.
