Chocolate Oat Cookies with Milk Chocolate Chips 1

The chocolate cravings are killing me lately. Especially when you consider I still want to lose 10 last pounds of baby weight. it isn’t so much baby weight as chocolate weight at this point. Especially when you consider how much chocolate husband dropped in my lap during my pregnancies!

Chocolate Oat Cookies with Milk Chocolate Chips

1 1/4 cup flour
3/4 cup cocoa powder
3/4 cup whole rolled oats (not quick oats)
1 teaspoon baking soda
1 teaspoon vanilla extract
3/4 cup Brown sugar
3/4 cup white granulated sugar
2 eggs
8oz (16 tablespoon s) butter
Chocolate chips (less than 12oz)

Mix brown sugar,  white granulated sugar, vanilla, and butter until creamy. Mix in eggs either by hand or with a mixer. Fold in cocoa powder and oats. Mix flour and soda together, then add them to the dough. Once your flour is incorporated,  add your chocolate chips. Since we went over the top sweet with these cookies, I went overboard again and used milk chocolate chips.  After the dough is well mixed, place it in the fridge for at least an hour to stiffen up.

Remove from fridge. Preheat oven to 375ºF. Using a spoon and your hands, form 1.5-2 inch circular balls and place them on a lightly greased baking sheet or parchment on a baking sheet. (I really want to try silicone sheets for this!)

Bake 12 cookies per sheet, one sheet at a time for 12-13 minutes. Remove from oven and let cool on the sheet for 4-5 minutes before removing them with a spatula. You can place them on a rack, or just go old school like me and use a cut brown paper grocery bag. I reuse my parchment paper for the whole batch, but some people use fresh sheets each time I guess. I am not sure why. Parchment is a new thing for me. I just got tired of my cookies sticking horribly.

So, these cookies have proven to not last long at our house. Not that any cookies last too long here. The best part of dark colored cookies is playing the chocolate or burnt game with the kids. I get way too much pleasure out of watching them wince when they bite into a burnt cookie thinking it was chocolate. I am evil for sure.
