Easy Low Carb Buffalo Chicken Bites
OK, we are going super easy today. Super duper mega easy.
There was this restaurant we used to walk to all of the time back when we lived in the city. It wasn’t a nice place, bu they had an outdoor patio that had no enclosure, so we were able to actually push the big double stroller right up to a table. People who only live in suburbs have no idea what a big deal this is, since suburban restaurants have enough space for normal people to slide between tables. Inner city restaurants have precisely six inches between each table and no one is actually allowed to dine anywhere if they are larger than a size zero. It isn’t that they won’t serve you if you happened to eat more than once a decade, it is simply that you will never actually be skinny enough to make it to a table. It is the nature of the game when they decided the seating capacity for a 10×10 ft room is 275.
So anyway, this dingy restaurant had a sidewalk seating area, I could actually push a toddler laden stroller right up to. Which allowed me to get a drink and an appetizer and pretend I was a real person for 45 minutes before walking home.
They had one good thing on the menu, and that was these little cut up buffalo chicken bites. The basket had about four large chunks of un-breaded buffalo chicken, with a few celery sticks and the required bleu cheese dressing. It was the perfect thing to get since it was low carb, small, and not too heavy while still being pretty satisfying.
Now I am out of the city and live between cornfields, and the only thing I can push my stroller up to for chicken is the actual chicken coop, which is not a great dining environment due to all the manure. So, I spent a stupid amount of time trying to recreate the buffalo chicken bites from that restaurant so that I can pretend I get to eat something other than toddler food. And huzzah! I have got it! It is so stupid! Basically, I am pretty sure all they did was cut up grilled chicken and saturate it in Frank’s. So here you go: the easiest appetizer you’ll ever make.
Easy Low Carb Buffalo Chicken Bites
- 2 large boneless, skinless chicken breasts
- salt and pepper
- 1/2 cup Frank’s Red Hot sauce
- Celery sticks
- Blue cheese dressing of choice
Use the salt and pepper to lightly season your chicken breast. Grill the chicken breast on any grill you have or even a frying pan until it seems about 85 percent cooked through. Remove from heat. Let the chicken breasts rest for 10 minutes.
Cut up the chicken into large bite sized chunks, pat them dry with a paper towel, and toss them into a sauce pan. Pour about a half cup of Franks’ Red Hot original over them and simmer it over medium heat for about five minutes. It is very important that you use the Frank’s ORIGINAL and NOT the Frank’s buffalo sauce. The buffalo sauce has this weird artificial butter taste that is awful.
Remove the sauced chicken from heat and plate up. It should make four servings of buffalo chicken bites. Add two celery sticks or more to each plate and a little ramekin of bleu cheese dressing. I like Lite House brand dressing.
I told you it was easy. And you can eat this order right on your own patio without squeezing between tables and worrying about knocking over someone’s martini with your handbag.
