Oh sweet pea currant tomato, where have you been all my life?
My husband grew a sweet pea currant bush in our basement over the winter. We learned that this plant just keeps growing and growing and is not an indoor tomato. Not that any are indoor tomatoes, but this one won’t quit. However, they are simply the best little pops of joy ever. Like the name implies, they are super sweet. They are more like a berry. In fact, I am thinking they would be great with strawberries and balsamic vinegar. Now my mind is going again.
You can pretty much add them to anything on Earth and it will immediately be better. Paired with our homegrown basil, they can’t be beat.
Pasta with Fresh Basil & Sweet Pea Currant Tomatoes
- 2 cups cooked spaghetti pasta or pasta of choice.
- 1 cup fresh sweet pea currant tomatoes
- 1/2 cup fresh basil leaves
- 1 tablespoon olive oil
- 1/2 teaspoon garlic
- 1/2 teaspoon crushed red pepper
- salt to taste
- Parmesan to taste
Cook your pasta according to instructions on package. Toss your cooked pasta in a pan with olive oil, garlic, red pepper, basil, tomatoes, and a pinch of salt.
Toss it around in the pan with very low heat to infuse flavors. Remove from heat and serve. Add parm to taste. A drizzle of balsamic would be grand as well, if you have it. This should create two nice little lunches. Some grilled chicken on top would be tasty if you are looking for more protein. I just like how easy this type of dish is to make if you have last minute company arriving.
