No Bake Coconut Fudge Protein Oat Clusters 1

We’re still on a protein powder baking kick over here, except this one is a no-bake piece of of cake! But, its not actually cake. Although,  they would be pretty good on a cake. Or in a cake. Or next to the cake. OK, let’s get away from cake for a minute.

Looking for a snack after a heavy workout? Got a sweet tooth? These are actually not very high in sugar due to the sweetener in the whey protein. Just make sure to keep them in the fridge.

No Bake Coconut Fudge Protein Oat Clusters

  • 1 cup (3 scoops) gold standard caramel fudge whey protein
  • 1 cup full fat canned coconut milk (not the refrigerated carton kind)
  • 1 cup dark chocolate chips
  • 4 tablespoon cacao powder
  • 2 cups unsweetened coconut flakes
  • 3 cups whole oats (not quick oats)

Heat coconut milk in a sauce pan on low, and mix in the whey powder. Add cacao powder and chips. Once chips are melted, turn off heat and move pan off the burner. Add the coconut shreds or flakes and the oats. Mix them in well and pile mixture toward the center of the pan. Let it rest until mostly cooled.
Using a spoon and hands to form clusters and press them onto parchment paper on a cooking sheet. You should get about 36 clusters.  Pop the parchment sheet in freezer or fridge and cool until clusters are firm and can easily pop off the parchment paper.  Place clusters in a seal-able container in the fridge.

If you want to make these into a protein bar, add a 1/4 cup coconut flour to the wet mixture during the heating process. Form into bars instead of clusters. This will give them more form and make them less melty.

These are fun little desserts, snacks, or dessert toppings!
