As much as I like the light, lower calorie smoothies we have been making lately, with all of my gym time I am sometimes hungry for a little more. One way to turn your smoothie into a meal is adding a banana and some Greek yogurt. Bananas have a decent amount of starch for replacing those glycogen stores in your muscles after a heavy lifting session. And full fat Greek yogurt is high in protein and quite filling. Plus, the saturated fat is great for proper hormone production. Not to mention brain development for your kids.
Spinach and Fruit Smoothie with Greek Yogurt
- 3 cups fresh baby spinach
- 1/2 cup sliced strawberries
- 1/2 cup banana sliced
- 1/2 cup milk (coconut milk is awesome)
- 1/2 medium apple chopped with skin
- 1/2 cup full fat Greek yogurt
Add your ingredients to a tall cylindrical container with the apple and strawberries on the top layer if using an immersion blender, or in any layer in a quality blender. I use the whip setting for about 60 seconds. The result looks like creamy guacamole, and tastes very fruity and rich.
One of these smoothies with a couple of my Low Carb Turkey Meatballs, is a perfect post workout meal for after a two hour gym session. It is all nourishing without leaving you feeling heavy or overly full.
