It was recently that time of year up here when people scramble to use up their hoards of tomatoes, if they managed to grow any at all. Since it was too late to plant when we moved, we didn’t have our I own tomatoes, but we did get inundated with them all the same. Canning is rather labor intensive so eventually people call it quits and foist their goods off on friends. I won’t complain. Especially since they are $5.99 at the store!
I was out of lettuce when trying to get through some grape tomatoes, so we went with a cold rice and bean number.
- Cooked brown rice
- Black beans (cooked/canned)
- Diced fresh green beans for some crunch (scallions would have been awesome!)
- Black olives
- Grape tomatoes
- Garlic
- Diced vidalia onion
- Fresh corn
- Chick peas
- Carrot sliced thinly
The beauty of a fridge dump salad is you just eyeball how much you want of each item. Toss them together with the garlic plus salt, pepper, olive oil and your favorite vinegar.
Not only is it delicious, but it saves well in the fridge, so it can be a decent salad for travel, work lunches, or even a potluck.
Tomato season is long gone after the frost moved in. I will miss it! Pumpkin and winter squash are just not that enthralling or versatile to me.
